- 3 Tablespoons Olive Oil
- 2 Cups Cherry Tomatoes
- Halved
- 1/2 Cup Dill
- 1 Teaspoon Lemon Zest
- 1 Cup Orzo
- 1-1/2 Cups Crumbled Goat Cheese
- 4- 4 Ounce Salmon Fillets
- Heat oven to broil.
- Toss oil, tomatoes, dill, zest and 1/2 teaspoon each of salt and pepper in a large bowl.
- Let stand for 10 minutes.
- Cook orzo in boiling salted water until al dente.
- Broil salmon 10 minutes per inch of thickness.
- Drain orzo and toss with tomato mixture.
- Add goat cheese to orzo and toss again.
- Serve with broiled salmon.
